If there's one principle of weight loss or healthy eating I
hear more than any other, it has to be, "Eat fruits and
vegetables."
Now, I have to confess that, as a single woman who would rather
do almost anything other than cook, most of my food comes in
a plastic tray from the microwave. There's nothing fresh about
that.
However, someone recently brought some home-made chunky salsa
to our home fellowship group. It was so delicous I could have
eaten it with a spoon and I began to think just maybe my body
was trying to tell me that I needed to eat more fresh foods.
I have snacked on carrots and fat-free dip occassionally, but
that's about it when it comes to fresh veggies in my diet.
This salsa, however, was so wonderful, that I decided to make
some for myself. So I headed to the store. Then I began dicing
fresh, vine-ripened tomatoes, celery, peppers, and onions. Then
I added some olive oil, vinegar, lemon juice, fresh cilantro,
mustard seed, kosher salt and cracked pepper.
The result looks more like a chopped salad than salsa, but
I absolutely love it. It's now my favorite way to get a variety
of fresh vegetables into my diet.
I wish I'd tried this sooner.
