Chocolate Ganache Filling
Ingredients:
2 cups high-quality semisweet chocolate chips
1 cup heavy cream
Fill a medium saucepan with an inch or two of water and place over medium-low heat. Place the chocolate chips and heavy cream in a medium glass bowl over the saucepan and melt the chocolate chips. Stir occasionally until the chips are completely melted. Remove the bowl of melted chocolate from the saucepan. Pour the ganache into a plastic squeeze bottle.
Sister’s Baking Secret: How to Stuff a Cupcake
Sometimes it’s nice to have a little surprise in the center when you bite into a cupcake. To get the filling right in the center, line up cooled cupcakes on a sheet of wax paper so you don’t get filling on your counter. Using an apple corer, gently remove the center of each cupcake, cutting all the way through the cupcake till you hit the paper baking cup. After pouring the ganache filling into a plastic bottle, squeeze the ganache filling into the center of each cupcake. Make sure your cupcakes are cooled or they could collapse if you try to core them when they are too hot. You can use this technique to fill your cupcakes with frosting, caramel, preserves, fudge, marshmallow, and anything else your heart desires!
